Amy's Overnight Oats

I LOVE oats, hot, cold, in my yogurt, in my muffins, in bread, I mean the possibilities are endless. Lately I have been searching blogs and the web for perfect “overnight oats”! Basically, overnight oats are just oats you let soak in some combination of liquid, yogurt, and spices (optional) overnight and then enjoy in the morning! I couldn’t find the perfect combination of ingredients for myself online so I decided to experiment and here is my first trial:
 Overnight Cinnamon Raspberry Peach Oats
Ingredients:

·         ½ cup plain non-fat Dannon yogurt
·         ½ cup vanilla unsweetened almond milk
·         ½ cup old fashion oats
·         1 tsp cinnamon
·         3 slices frozen peaches
·         handful of raspberries
·         ½ oz of almonds


The night before I combined to oats, yogurt, almond milk, some peaches, and cinnamon in a bowl:

Next I mixed the ingredients together:


Then I covered them with foil and placed them in the fridge to soak overnight!

In the morning I added the almonds and raspberries and Taaadaaa:



Often people add more liquid in the morning but I didn’t need to because I was happy with the consistency! Overall I was very pleased with my first attempt at over night oats! The texture is unqiue and the toppings are endless. For more protein you could add peanut butter or protein powder instead of the fruit.

Grocery Shopping Tips

Here are some great tips to save calories, money, and time at the grocery store! Tackling the grocery store can be a challenge, but if you follow this advice, you will be on your way to a smaller waist and more room in your pockets from all the money you are saving!


·         Plan ahead. Go to the store with a shopping list and stick to it! Also check the newspapers/online ahead of time for products that are on sale and incorporate them into your list. Planning ahead will allow you to put together complete meals throughout the week.


·         Buy in season. Blueberries are a cheap treat in the summer but practically an investment once it’s fall. Check your farmers market for local ingredients as well, which should be picked at the peak of their nutrition! Consider growing some of your own produce as well.



·         Purchase sale items in bulk. Use the same main ingredient and dress it up differently. Turn ground turkey into chili, turkey burgers and a topping for tacos. Buy produce by the bag, not individually, and remember that frozen fruits and vegetables are just as nutritious as the fresh kind and they are much cheaper and will last much longer. It is even smarter to buy big containers of yogurt and add your own “fruit on the bottom” as well as big bags of snacks to make your own “100 calorie packs” for the week, rather than buying them prepared. Lean cuts of meat and other things should be purchased when they are on sale and then you can freeze them for future uses.



·         Spice it up.  The use of spices is also a great trick to save money. Lean chicken breasts can taste differently with sp many unique flavors. Also, using spices rather than fatty dressings and marinades will eliminate many calories.



·         Check the ingredients. If you are having a hard time reading what is listed or are overwhelmed by the amount of ingredients, there are probably better food options available.



·         Use the labels. A lot of grocery stores now have a tag or sign that identifies healthy ingredients. It can be time consuming to read every label but just looking at the identifiers can help. If you are able to read the labels, don’t check each item—check what is most important for your diet; carbohydrates, sodium, trans fat, and saturated fat should be low.



·         Chose lean protein. Fish, chicken, and turkey are much leaner than beef and pork products. If choosing ground beef, pick the leaner options, 93/7 or 90/10.



·         Beware of advertising. Be careful when choosing things that are low fat or no sugar added. Give the label a quick check to make sure the product isn’t loaded with artificial sweeteners. Sometimes low fat, will often mean more sugar, and vice versa. Real food items are best and remember to use portion control.





·         Think whole foods. The more processed foods you buy, the higher the price. Nutrient rich foods will also help you stay fuller, rather than the empty calories found in refined sugar products. Also, drink a lot of water. Fruit juices and soda can add up on the grocery bill and in your calorie count, but filtered water is free!





·     Shift those portion sizes. Use pricey meats as an accent, not the main event. Make half your plate vegetables.



·      Invest in some plastic containers for leftovers. The individual frozen entrees and soups available for quick meals are expensive, and also higher in sodium than most things you would probably make for dinner. You can save a lot of money, and eat a little healthier, by simply packing leftovers into little containers for lunches, or individual servings for quick dinners.

High Protein Breakfast Ideas

Breakfast is a meal that tends to be higher in carbohydrates and lower in protein- with go-to foods consisting of cereal, fruit, oatmeal, pancakes, toast, etc. However, starting the day with a high protein breakfast will help keep you fuller longer and provide less sugar-based calories that will leave you fatigued and hungry soon after. Here are some great ideas for high protein breakfasts

  • Omelet with veggies and turkey bacon or sausage
  • Protein Smoothie with yogurt, 100% protein powder, and 1 piece of fruit
  • Protein Bar such as Think Thin, Zone Bars, Pure Protein, Detour Bars

Turn 5 Main Ingredients into 25 Dinners

Too busy to cook dinner every night? Trying to not spend a ton of money at the grocery store? Here's how you can take 1 main ingredient and turn it into 5 new dinners. As I mentioned in my meal planning post, cook this main ingredient when you get home from the grocery store, wrap individually and freeze it, to use in 5 different weeknight meals.

1) Chicken

  • Grilled chicken parmesan with mozzarella and tomato sauce
  • Chicken stir fry with brown rice, broccoli, and sauce of choice
  • Chicken paninis with spinach, roasted tomato, and pesto
  • Breaded and baked chicken strips with buffalo sauce served over salad
  • Chicken kabobs with zucchini, mushrooms, and peppers, marinade and BBQ on a stick

2) Ground Turkey

  • Turkey Chili
  • Turkey Burgers with carrot fries
  • English muffin pizzas with spinach, cheese, and ground turkey
  • Turkey meatballs with whole wheat pasta with basil and olive oil
  • Italian turkey meatloaf

3) Eggs

  • Sweet potato with spinach and egg scramble
  • Savory omelete with goat cheese, spinach and onions
  • Egg salad sandwiches made with light mayo and terragon
  • Add hard boiled eggs to a Greek or Caesar Salad
  • Quiche feta, salmon, and dill

4) Black Beans

  • Healthy baked nachos with black beans, avocado, and salsa
  • Mix with rice, veggies, and tofu for a vegetarian stir fry
  • Make homemade black bean burgers 
  • Process to make a bean dip for veggies and pita chips
  • Black bean soup

5) Salmon

  • Make fish tacos with whole wheat tortillas, cabbage, and yogurt sauce
  • Top with salsa and serve with roasted vegetables

  • Teriyaki salmon with pineapple and snap peas

10 Minute Dinner: Sweet Potato with Spinach and Egg Scramble

Yesterday, I got home late from work and wanted something quick and easy to eat for dinner. I contemplated peanut butter toast or running out to get something. Instead, I turned to my quick, nutritious go-to meal, Sweet Potato with Egg and Spinach Scramble. This meal is loaded with nutrients, satisfying, and it comes together in just 10 minutes.

First, I stabbed my sweet potato with a fork before wrapping in a moist paper towel, and microwaved it for 5 minutes.



While this was in the microwave, I cooked 2 eggs on the stove top and sauteed some spinach in some olive and a sprinkle of salt.

I sliced and peeled my sweet potato, just in time for the stove ingredients to finish cooking. Then I simply plated everything and finished.

Tips for Healthy Meal Planning on a Budget

    As a young woman living in Washington DC, working a full time job, maintaining a social life, and taking time to care for myself, I sometimes find there are not enough hours in a day. Health is so much more important than the food we eat; it is about taking care of yourself physically, mentally, and spiritually. The key component that helps me get by is planning ahead. Planning appointments and work, planning time to workout and see my friends, and planning my meals. When I know I have healthy, nutrient dense foods that also taste great, and are already planned and prepared, the week can bring all sorts of new twists and turns and I know I will be fueling my body well. Meal planning does take some time, but once it is created, you do not even have to think about it. Plus, you don’t have to stop for fast food, or eat the same boring meal each night. I’ve learned a lot over the past year about meal planning for healthy foods that do not cost a fortune and I thought I would share them all with you.

1)      First, map out your week. Know which nights you will be working late, what appointments you have, and what night your child has practice. Once you know what you week looks like it will be easy to fit meals into your schedule.
2)      See what coupons you have, and what sales are in the paper so you can plan your meals off of this.
3)      Keep your freezer organized by labeling and dating whatever meals or food items you have saved. For information on what foods can be frozen and to determine their storage time, visit the USDA Freezing and Food Safety Fact Sheet. Use what you have to help plan your meals for the week.
4)      Now it is time to come up with your meals, using a few main items in various ways, keeping in mind lunch and dinner. Here are some examples.
a.       Ground Turkey Meat. This same healthy, protein can be used to make turkey chili for dinner one night and 2 lunches, turkey tacos, and turkey burgers.
b.      Chicken. Prepare chicken breasts to be used in stir fries with brown rice and vegetables, grilled chicken parmesan, homemade chicken salad served with crusty bread.
c.       Eggs. Make a savory baked egg dish with spinach, feta, and garlic and serve it with a salad. This could last 2-3 nights and eggs are very inexpensive.
d.      Pantry Items. Chick peas and beans are a great protein source and can easily add bulk to salads, healthy canned soups, and make great side dishes.
e.       Side dishes are next. Buy frozen vegetables to create a side dish in 2 minutes. Brown rice can be made in bulk on cooking day, or purchase the microwaveable bags for simplicity. Sweet potatoes are rich in vitamins and can be prepared in the microwave in 5 minutes.
f.        Have some quick meals you can pull together in between. Grilled paninis can come together in minutes, English muffin pizzas with vegetables are kid friendly, and Greek salad wraps are unique and healthy.
5)      Take advantage of spices. A chicken and vegetable stir fry can be a completely different dish with a dash of cumin one night, and rosemary the next night.
6)      Now think of Breakfast and Snack Ideas. String cheese, fruit, chopped vegetables and hummus, and nuts make a great snack. Buy things such as nuts in bulk and fill in your own reusable bags with a single serving.
7)      Fill in the gaps. Consider what spices, pantry items, and other staples you need to round out your list.
8)      Write down what meals you will be having which night, including breakfast and lunches. Save the roast for a lazy weekend day, and schedule English muffin pizzas on soccer night. Remember which meals will make enough for leftovers. Hang this on your fridge so everyone can see the menu for the week.
9)      Grocery Shopping. Take your list and stay focused. Try not to go hungry or distracted so you can stay true to the list you have worked so hard on.
10)  When you come home from the store, portion out your snack bags and wash and chop all your vegetables before putting them away. Make whatever you can that day, such as the turkey chili and refrigerate or freeze it in individual containers depending on which night it will be served. Bake all your chicken before wrapping and freezing it so you can just reheat it on a late work night with frozen vegetables and rice.

 
Remember that no matter how busy you are, your health and eating great food are a top priority. You can have gourmet, home made meals with just a little planning on the weekends. Save money and feel better both physically and mentally knowing you have a plan.

Weekend in New York City

Last weekend was a great time with some of my best college friends in NYC.

Friday afternoon we took the Washington Deluxe Bus after work and I planned ahead to pack snacks for the ride and the rest of the trip. Packing protein bars and snacks really helps save money and allows you to have healthy foods in the mix.  Dinner included some baby carrots and overnight oats in a jar, a peanut butter jar, to be exact. Delicious and healthy. 

Friday night we went to a couple of bars in my friends neighborhood and it was great to catch up over a beer.

Saturday morning I woke up and had a ThinkThin Bar from my bag before heading out for our 5 mile run along the river.


Following this run I was so hungry and excited we were going to a more indulgent place for lunch, Max Brenner.  From the minute you turn the corner you can smell the chocolate coming from the building. Everything on the menu had chocolate in one way or another and in celebration of a birthday and a mini vacation weekend, we knew dessert was in our future. 

My friend and I played it smart by splitting a more healthful meal and splitting dessert to save money and calories! We started with a chicken panini with goat cheese. It was full of flavor and the perfect size.

For dessert we chose the Euphoria Sundae due to the chocolate, peanut butter description. It totally hit the spot and it was such a fun afternoon. 


We walked off our big meals and headed back to the apartment to plan for the birthday girl's festivities. We ended the night at an 80s cover band at the canal room and it was a perfect ending to a great weekend.

On the bus home today I was just thinking how blessed I am to have such great friends and experience different things. While I love NYC, this weekend made me appreciate DC even more. I love that while it is a city, it is a small city that I have learned to love and call home.

For the past two weeks, every free minute I had was spent reading notes and taking practice exams, but it was all worth it when I passed my registration exam yesterday. Nothing like a hurricane to force you to study all weekend! After 4 years of undergrad, a 10 month dietetic internship, weeks of studying and one examination later, I am officially a Registered Dietitian. It is truly a relief and a great feeling, knowing that for the time being all school related things are behind me.

In my free time I also went to two great DC spots, Policy for Brunch and Urbana for happy hour. Policy was one of the best brunches I have been to, granted it was following a long training run so I was extra hungry, but the atmosphere and food choices really hit the spot! One of my favorite dishes was the short rib and eggs, this is something I wouldn't usually order, but it turned out to be the best of the ones we tried.

Urbana was also a place I have been meaning to try for a while. The design of the restaurant includes big open spaces, and it was a great setting for drinks with girlfriends. We ordered their $5 special house red and shared two pizzas which are half price during happy hour. I would highly recommend this spot!

Weekend Fun in DC

Where is this month going?! The days are completely getting away from me and though it is already Thursday of the following week I still have to share the fun we had in DC this past weekend.

Friday night we got a great deal off of What's The Deal DC for a beer tasting at RFD in Chinatown. This is one of my favorite happy hour spots because they have a variety of great beers and they are all included in various specials throughout the week. I love when unique beers are part of happy hour as opposed to your run of the mill Bud Light, Miller Light, etc. The deal was $12 for 5 flights of beer to taste and a complimentary glass of whichever beer you liked the best! There were four of us so we had fun trying around 15 or so beers. I tried to stick to small sips and really enjoy the different tastes. Lately I am loving dark beers and the Vanilla Porter was my favorite, thought it is definitely a winter drink.



After seeing some clients in the morning we also went to a new to me place in DC, Cafe Japone, on Saturday night. Friends of ours set up a college reunion type dated night and it was great seeing everyone. We had a section of the bar all to ourselves with great specials.

We started Sunday with a 4 mile run, our first "long run" to wrap up our first week of training. Overall I'm feeling strong and excited to add some extra mileage. After our run we rewarded ourselves with homemade peanut butter and jelly pancakes, yes that's right. I stirred natural peanut butter into gluten free pancake mix instead of oil, and reduced sugar free jam  on the stove with a pinch of cornstarch for the syrup. The combination was extremely rich and flavorful and it definitely hit the spot!

The good eat's continued throughout the day with a BBQ at a friends house with burgers topped with avocado, watermelon, and lemon feta pasta salad. They also made homemade peach frozen yogurt. The eating is definitely my favorite part of half-marathon training.

Love for Yoga

Today started out with one of my favorite activities, Yoga. I took a sunrise class this morning and really value starting the day this way. Not only am I getting a good stretch and a hard workout, I also feel better mentally and have a positive outlook on the day ahead.


I am fairly new to yoga and I really want to challenge myself to master the moves and push myself, not just go through the motions on my way to savasna. 

I came home famished and immediately had one of my favorite breakfast bars, ThinkThin.  The bars are so delicious (hello creamy peanut butter covered in chocolate) and are packed with 20g of protein. 


Today at work I'm giving a grocery store tour. I love bringing nutrition education out of the office and into the real world. 


Homemade Pizza and Chocolate Covered Strawberries

Last night was a fun, simple evening that I will always remember. After a great day of rewarding clients at the office I drove home listening to recordings of study materials for my RD Exam. Jean Inmann's Boston Accent always puts me in a great mood.

I pulled up just after listening to the information on cholecystitis and was thankful I still had an appetite. The kind BF was waiting for me with dough in one hand, flowers in the other, perfect beginning if you ask me. I also was surprised to see a Happy Birthday Cookie Cake from my generous parents waiting on the door step. It really made my day.



I watched from a distance as He assembled the pizza and I thought it was brilliant that he picked up dough from Cosi and gathered toppings from the salad bar at Harris Teeter. I always find that when I make a pizza with an array of toppings, I only use a little of each thing I purchased. He worked the dough like a pro :) and we sat down to some salads and wine while it baked in the oven on a pizza stone we purchased from Target. It really makes the difference in the crust.




We chatted about our upcoming summer plans and everything going on in our lives and it was a great evening with even better food. After dinner we broke out a piece of the cookie cake and I didn't even know this whole time there were chocolate covered strawberries he sneakily placed in the freezer when arriving. He had a great idea of coating the strawberries with Hershey's hard-shell syrup and it worked like a charm.

Last night was somewhat more indulgent than usual but the circumstances called for a celebration. I was so grateful for everyone's sincere wishes and the thoughfulness of the dinner.

Today I started my morning as usual, coffee and a protein bar for breakfast.  


This was followed by a cheesestring, yogurt, and granola bar for easy snacks throughout the day. I find it is best for my schedule to eat small meals every 2-3 hours when I am at the office.
